Banana Chocolate Chip Oatmeal Muffins (with Lard)

These are a staple in our home, because let's face it, who uses up all their bananas before they are overripe? I suspect my husband "forgets" to eat them just so I will make muffins. These muffins are delicious, and a good snack for busy days.

For extra fluffy muffins, use pastry flour. Makes 12 muffins.

  • Place muffin liners in muffin tray.

  • Whisk lard and brown sugar until light and fluffy. Add eggs and vanilla, mix together. Add bananas and mix until smooth.

  • In a separate bowl, combine dry ingredients, leaving the chocolate chips out. Add dry ingredients to the wet mixture and gently combine using a spatula, don't over mix. When the dry ingredients are almost incorporated, add the chocolate chips.

  • Preheat oven to 375°F. Carefully spoon the mixture evenly into your lined muffin tray. The cups will be quite full, don't worry though.

  • Bake at 375°F for 18 minutes, or until golden on top. Leave muffins to cool in the try for 5 minutes then remove them and place on a wire rack.
